Cucumber Mint Martini

Cucumber Mint Martini

This recipe is not yet perfected, but it's a very good cocktail for a hot summer day. Use fresh, in-season cucumbers that are super fragrant.

Ingredients

1 1/2 oz. gin or vodka

Pinch of sugar, optionally more for a sweeter version The sugar is to help muddle the mint, so I prefer raw sugar so I can use less of it

1/2 oz. fresh squeezed lime juice

1 oz. cucumber juice

3-5 mint leaves

1 oz. good white vermouth I prefer Interrobang's White Vermouth No. 73

Instructions

  1. Prep cucumber juice by cutting cucumber(s) into chunks, and use a food processor to make a purree. Strain the purree to remove the pulp and store the juice in a refrigerator. The juice should keep for a few days chilled, it so can be prepared in advance.
  2. In a cocktail shaker, muddle mint with sugar until it is broken apart.
  3. Add remaining ingredients, including 1 oz. of the prepared cucumber juice and some ice cubes, shake well, then strain into chilled cocktail glass
